Native potato starch is unmodified starch extracted from Solanum tuberosum tubers by wet milling — no chemical or physical treatment beyond drying and milling. It retains its natural granule structure (15–100 µm oval granules) and phosphate monoester groups, which give it uniquely high viscosity and clarity. Modified starches undergo acetylation, cross-linking, oxidation or other treatments to improve stability under shear, acid, or freeze-thaw conditions. For clean-label, E-number-free formulations, native potato starch is the preferred choice.
Native potato starch gelatinises at 58–65°C (onset 58–60°C, peak 62–68°C depending on concentration and shear). This is among the lowest of commercial starches — lower than corn (62–70°C) and rice (68–78°C). This is advantageous in low-temperature processing (sous-vide, pasteurised sauces) and in meat systems where thickening before full protein denaturation is desired.

Yes — it is one of the most effective starch types for gluten-free bakery. Its high swelling power, neutral taste, and excellent water absorption make it ideal for GF bread, cake, and pasta. It carries no gluten contamination risk (potato is naturally gluten-free, no cereal contact in dedicated facilities). Always verify allergen cross-contamination documentation with supplier CoA. In cooked ham and emulsified sausage: 1–4% on total formulation weight. At 2–3%, native potato starch improves cook yield by 15–22% and reduces cook-loss significantly. The low onset temperature (58°C) is critical — it allows gel formation before myosin denatures at ~55°C, locking moisture within the protein matrix. Always evaluate at your specific cook temperature profile.
Native potato starch produces exceptionally clear pastes — among the clearest of all native starches. This is due to minimal lipid content (<0.1%) and low protein content (<0.4%), both of which cause opacity in other starches. The result is a high-gloss, transparent gel ideal for clear Asian sauces, gravies, and glazes. Note: over-processing above 90°C or prolonged shear will cause viscosity breakdown (shear thinning) — native starch is not retort-stable.
